I have been having many if not most symptoms of celiacs disease or at least gluten intolerance. So I have decided to eliminate gluten from my diet and see if my symptoms will be eliminated as well. It has only been about a week so far and I feel very little, if any at all, better.
1) How long after removing gluten from my diet should it take for my symptoms to change or be eliminated if I do in fact have gluten intolerance?
2) To what extent will my test be spoiled if I unknowingly ingest a small amount of gluten?
