I have unexplained inflammation, swelling, and severe pain in both of my big toes.

I have been to both my doctor as well as my podiatrist and neither have been able to diagnose my issue. My big toes alternate swelling, inflammation, and severe pain. The area affected is usually only the too joint of the toe. The area will swell to twice the natural size and become so painful that I cannot hear weight on the foot. I have been tested for gout twice and both tests came back negative. I am a vegan so I don't consume anything that would create uric acid in my body. I have portions of my toenail removed in anticipation that it could be somewhat of an ingrown toenail issue, but there was absolutely no relief whatsoever. The doctors are baffled and so am I!!! Any help would be amazing...
